If you choose to have the fish whole, we will simply scale and gut it. Alternatively you can let us do the work for you and choose the filleted option. Our processors will fillet, scale and pin the fish to leave you with just the fillet. (Please note that weights are approximtes and that whilst we endeavour to remove all bones when pin-boning we cannot gurantee that we get them all)
